Gajar Ka Halwa

Gajar ka Halwa, a mandatory Indian tradition to cook at home during winter, is a must-have healthy dessert. The basic ingredient used to make Gajar Halwa is carrots. Carrots are loaded with vitamin A, vitamin C, vitamin K and fibre.

Adding milk to the Halwa adds calcium and protein to the dish. The cashews and raisins add to the protein and antioxidants in the Halwa.

Ingredients

  • Red Carrots -1kg
  • Sugar – 1 cup
  • Khoya – ½ cup
  • Full cream milk -1litre
  • Chopped cashews & almonds – handful
  • Raisins – few
  • Cardamom powder – ¼ tsp
  • Suruchi Cow Ghee – 4 tbsp

Preparation

  • Peel the fresh red carrots & grate them.
  • Heat a thick bottom pan and fry the nuts in 2 tbsp of Suruchi Cow Ghee. Keep the nuts aside.
  • In the same Ghee, add the grated carrot and sauté for 20 minutes, till the moisture of the carrot dries out.
  • Add the milk and cook on medium heat for 30 minutes while stirring occasionally.
  • The milk will keep evaporating. Cook till it has nearly fully reduced.
  • Add the sugar and the remaining ghee, and cook for further 10 minutes, stirring continuously, till ghee is released from the sides.
  • Now add the khoya, fried nuts, raisins, and cardamom powder. Mix well and turn off the heat.
  • Gajar ka halwa is ready to eat. Serve hot, garnished with some grated khoya or almond slivers.
